Chicken Cacciatore

Last night for dinner, my husband and I had chicken cacciatore.  When we first started dating, I began to make more Italian dishes.  He really likes Italian food, especially pasta.  I continue to experiment and cook new Italian recipes for him.  Hope you enjoy making this dish as much as I did.

Dredge 1-2 lbs. chicken pieces in flour.
Melt 2 Tbsp. butter in pan.
Brown chicken.
Cut 1 green pepper, 1 yellow pepper, and 1 onion.  Stir into pan with chicken.  Cook for approximately 2 minutes.
Add 2 cloves crushed garlic* and 1 Tbsp. Italian seasoning.
Stir in 1/2 cup white wine.  Simmer for 3-5 minutes.
Add one 28 oz. can crushed tomatoes.
Cook for 30 minutes or until chicken is cooked through.

Serve over pasta.

*Note: you can add more garlic.  My husband believes, "You can never have too much garlic."

We had enough leftovers for lunch today and to have for dinner tonight.

Mama Luka Comes Home

I came across this video clip of Dr. Helen Roseveare, who was a missionary to the Congo in the 1950s-1970s.  She was in the Congo during the political instability during the 1960s and was kidnapped and raped.  Click on the link to view: http://vimeo.com/2495731  When I first watched this video, I cried.  Too often I am like Helen, not praying for something because I can't believe God can do it.  What little faith I have!!  Thankfully, I have a wonderful Saviour who is perfect and died for my sin.  I don't deserve the salvation that has been given to me.

This video reminds me of a few Bible verses:

Matthew 21:20-22 "When the disciples saw it, they marveled, saying, "How did the fig tree wither at once?"  And Jesus answered them, "Truly, I say to you, if you have faith and do not doubt, you will not only do what has been done to the fig tree, but even if you say to this mountain, 'Be taken up and thrown into the sea,' it will happen.  And whatever you ask in prayer, you will receive, if you have faith."

Lord, give me the faith like a little child.
