Cauliflower Crust Pizza {Pinterest}

On Monday, I was browsing Pinterest and noticed a recipe for pizza without using flour.  I decided to take a look and saw that it called for cauliflower.  I thought, "That's interesting."  I'm not a huge fan of cauliflower, but it's one of the few veggies Drew actually likes, so I decided to make it for dinner on Thursday.  It was actually good.  I had not idea what to expect.  Thankfully, the person who blogged about the crust wrote,
I’m not going to lie and say it’s just like eating a flour pizza crust because it’s not.
She was 100% correct on that.  It also did not taste like cauliflower, but rather a bit like a quiche, which I shouldn't have been too surprised because it does call for eggs and cheese in the crust, but I was not sure what to expect.  It was also Charis approved, not that I base my standards on what she wants and/or doesn't want, but it was nice that she ate all of her piece of pizza.  I will be making this again, probably in my cast iron pan.

Have you eaten pizza crust that was not made out of the usual, flour, yeast, water, sugar, etc.?
