My Favorite Go to Recipe for Carrots {Autumn Blog Challenge}

Cooked carrots.  I used to hate them.  I enjoyed eating raw carrots, but cooked carrots I cook not choke down.  All that changed after Charis was born.  Drew and I were gifted with a meal that included a side of Garlic Dill Carrots.  I begrudgingly decided to go ahead and eat them and was pleasantly surprised that I liked them.  Now these are my go to recipe when making cooked carrots; they are delicious.

2 lbs. of carrots

Peel and dice carrots into 1/4 inch chunks.

Meanwhile, bring a small amount of water to boil on stove, and add carrots; 
cook for seven minutes.  Drain carrots into colander. 

Melt 2 Tbsp. butter on stove.
DO NOT use margarine.

Add 1/2 Tbsp. garlic powder and stir.
Garlic powder makes everything taste better.

Add 1/2 Tbsp. dill weed and stir.

Add the cooked carrots to butter.  
{I added another Tbsp. butter to carrots.}

Enjoy eating the garlic dill carrots.  
I know I did and still do.

FYI: I have since blamed my reason for not liking cooked carrots because of canned store bought carrots.

  1. Yum....dill and garlic with carrots! Definitely two flavors that I enjoy. I have all the ingredients on hand so I can try the recipe tomorrow!

  3. I loved cooked carrots. My mother in law makes them with brown sugar and butter they are amazing (but probably any veggie would with that right?)
