
Peel a banana.
Mash the banana.
Crack 2 eggs in bowl and mix together.
Add 2 Tbsp. Almond meal.
{Not necessary, but it needs to be used up.
I got mine from Trader Joe's because I made a meal for a family from church,
and they needed GF food.}
Melt butter in saucepan and scoop about 1/4 cup into the pan.
Cook until both sides are golden brown.
They are a crepe like consistency.
This is one of my new favorite foods, and they're SO easy to make. Serve by themselves or add maple syrup to them. Unfortunately, Drew does not like these because he thinks, "The bananas make too much of themselves."

I didn't realize this works with just bananas and eggs! I tried adding a tablespoon of coconut flour before and it was too gritty.

ReplyDeleteWe make these all the time, sans the almond meal-it's not really needed. Just two eggs and a banana. Great use for marked down organic bananas. Also, you can use a mini blender and it's super fast and way smooth
