Pumpkin Cream Cheese

Fall is one of my favorite seasons. There are many good things about autumn: cooler temps, more knitting, walking to the park, wearing sweaters, leaves changing colors, apple picking, Halloween, Thanksgiving, getting ready for Christmas, spending time with family, soups, baking, candy corn, and pumpkins.

There is so much food with pumpkin: pumpkin latte, pumpkin pie, pumpkin cake, pumpkin bread, pumpkin oatmeal. The list seems endless. The other day, after Charis woke up from her nap, I decided to make homemade pumpkin cream cheese with her. It's so simple, plus all the ingredients can be bought at ALDI.

8 oz Neufch√Ętel Cheese or cream cheese
1/3 cup pumpkin
1 1/2 Tbsp. maple syrup
1/2 tsp. ground cinnamon

Mix everything up in mixer. Enjoy! This tastes delicious on toast, bagels, apples, or, according to my daughter, by the spoonful.

Watch out for little ones trying to put the cream cheese on their fingers to lick it off.

  7. They make cream cheese in so many flavors in the store now the flavors go from sweet to savory. This is a great way to make your own spread if you can't find this flavor.
