There is so much food with pumpkin: pumpkin latte, pumpkin pie, pumpkin cake, pumpkin bread, pumpkin oatmeal. The list seems endless. The other day, after Charis woke up from her nap, I decided to make homemade pumpkin cream cheese with her. It's so simple, plus all the ingredients can be bought at ALDI.
8 oz Neufchâtel Cheese or cream cheese
1/3 cup pumpkin
1 1/2 Tbsp. maple syrup
1/2 tsp. ground cinnamon
Mix everything up in mixer. Enjoy! This tastes delicious on toast, bagels, apples, or, according to my daughter, by the spoonful.
Watch out for little ones trying to put the cream cheese on their fingers to lick it off.
