It is grilled cheese month! When my family went out to eat, as a young girl, I would always order grilled cheese and french fries off the children's menu. Now, I shudder to think about the ingredients in processed cheese products that most grilled cheese sandwiches contain. When feeding my family grilled cheese sandwiches I usually use provolone or mozzarella because these cheeses melt easily. With the most recent grilled cheese sandwiches I made, I decided to try out Rumiano Cheese and loved how the sandwiches turned.

When my daughter requested pizza for dinner the other night, I told her we would make grilled cheese pizza sandwiches for dinner. In order to make them, you need:
  • Olive oil
  • 2 slices of Italian bread per person
  • Spaghetti sauce
  • Monterey jack cheese
  • Pepperoni
Spread olive oil on one side of each bread. One the other side, add 1 Tbsp. spaghetti sauce and spread on bread. Place one slice of bread in skillet (olive oil side down).

Cut Monterey jack cheese into thin slices and place on bread (in skillet). Add pepperoni on top of cheese.

Place other slice of bread on top of pepperoni and gently press sandwich.

Cook over medium head for 3-5 minutes, until golden brown. Flip sandwich and cook for another 3-5 minutes.

When finished, allow it to cool for a few minutes and enjoy. My daughter loved this just as much as pizza!

  5. It says Natural Provisions in Williston, but I have found it at Hunger Mountain Coop in Montpelier, VT (which is MUCH closer)!
