Summer! I love summer, especially with all the fresh fruits, vegetables, and herbs. Two weeks ago, I was in PA at my parent's house, and my mom has tons of mint growing in her garden. It has taken over like a weed.
When my mom took out some lamb from the freezer to grill, I whipped up some mint sauce (using mint from her garden). I hate Polaner's mint jelly that Americans eat with lamb. I dislike it's texture, taste (too sugary), and the fact that it does NOT contain any mint. My homemade mint sauce is thick, flavorful, and since my dad is diabetic, it does not contain sugar.
Ingredients:
Mint (8-10 stems)
Vinegar
Salt
1 Packet of Truvia
Directions:
1. Take mint leaves off stems and place in food processor.
2. Chop leaves up in processor. Place leaves in a half pint canning jar.
3. Sprinkle Truvia and salt over mint leaves.
4. Pour vinegar over leaves. Smash the leaves down as you're adding vinegar; pour just enough to cover the leaves.
